How to make vegan chocolate brownies

Ingredients

30g Coconut flour
50g Cocoa powder
30g Melted coconut oil
100g Dairy free yogurt (preferably vanilla)
2 tbsp Sweetener (eg. stevia)
2 tbsp Chia seeds soaked in 6 tbsp. water
Topping
1 tbsp Peanut flour
2 tbsp Water

Method

Soak the chia seeds in the water and leave for at least 30 minutes before preparing everything else

Preheat the oven to 175°C and linea square baking tin (8x8 inch) with baking paper/parchment

Blitz all of the ingredients (including the soaked chia seeds) in a blender until smooth

Pour the mix into the lined baking tin

Bake for around 25 minutes (or until a skewer comes out clean)

Leave to cool before removing from the tin

Mix the peanut flour and water together to form the topping and drizzle on top of the brownies
