Mint Chocolate Halloween Cookies

Halloween is almost upon us and, what better way to get into the scary spirit than baking up these cute mummified mint chocolate cookies! Ingredients

Cookies
100g Butter
120g Plain flour
50g Hydra 6® protein powder, Chocolate Charge
1tsp Mint flavouring
1 Egg
10g Sucralose sweetener
Topping
110g Icing sugar
13ml Cold water
2ml Mint flavouring
Edible sugar eyes

Method

 First, preheat the oven to 180°C and lightly grease a cookie sheet or baking tray

Then, in a large bowl, add in all of the ingredients and combine to create the cookie dough mix

Next, divide the mixture into 9 cookie dough balls

Evenly place them on the cookie sheet and pat them gently into round 'cookie' shapes (roughly 1cm thick)

Then, place the cookies into the middle of the oven for 5 minutes - they will be soft when they come out so leave them to cool and harden. While they cool, you can make the topping!

Add all the topping ingredients together in a cup and mix with a teaspoon, making sure there are no lumps. Once thoroughly mixed, place into a piping bag

Then, place all the cookies on a sheet of greaseproof paper and add a small dot of icing on the back of the edible sugar eyes and add them to the cookies

Next, pipe the icing onto the cookies, crisscrossing and avoiding the edible eyes!

Once you've iced each cookie, lift it up gently and place onto a cooling rack. This makes sure the excess icing is removed from the edges

Leave the icing to cool and harden, then your cookies are ready to eat and enjoy!
