Go Nuts™ Peri Peri Tacos

Take these tasty tacos, created by the talented duo The Cook and Him. Just like the Peri Peri bar, this recipe is filled with flavour, along with a generous sprinkling of the bar on top - the perfect finishing touch!

Ingredients

Tofu
400g tofu
280g broccoli
3 tbsp oil
2 tbsp liquid aminos or soy sauce
1 tsp fresh ginger
1 tbsp agave or maple syrup
2 tsp garlic powder
2 tsp ground cumin
1 tsp smoked paprika
1 tsp chilli flakes
1-2 tsp dried oregano
A pinch salt and pepper
Sweetcorn Salsa
100g sweetcorn
100g cherry tomatoes
½ red pepper, finely diced
2 spring onions, thinly sliced
1 tbsp olive oil
1 tsp white wine vinegar
½ tsp garlic powder
A pinch salt and pepper
To Serve
Tortillas
Lettuce
Coleslaw

Method

1.

First, drain the tofu and lay between kitchen paper for at least 30 minutes to soak up excess liquid

2.

Then, preheat the oven to 200°C and line a large tray with parchment paper

3.

In a large bowl, mix together the oil, aminos, ginger, syrup, spices, oregano and salt and pepper

4.

Then, dice the tofu into cubes and add to the bowl. Coat the tofu in the sauce and then place on your prepared tray

Put the broccoli into the bowl and coat in the remaining sauce, then place on the tray with the tofu and bake for 35-40 minutes

6.

While your tofu bakes, make the salsa: drain the sweetcorn and tip into a bowl. Add the tomatoes and onions

7.

Next, whisk together the oil, vinegar, garlic powder and seasoning and stir into the sweetcorn mix

8.

To serve, layer up the lettuce, coleslaw, tofu and broccoli onto a tortilla, top with the salsa and chunks of the Go Nuts™ Peri Peri bars and enjoy!
